The grapes are harvested bet- ween the first and second decade of September. Part of the grapes are collected in boxes and then placed on plateaux in well-ventilated rooms where they are partially dried for approx. 40 days. A second part is left hanging on the vines to be harvested during the first ten days of October, and then pressed. After fer- mentation the wines obtained are aged separately in 30 Hl oak for about 30 months and lastly blended and bottled. Bright ruby colour. The bouquet recalls small woodland fruits, cherries, perennial herbs with a hint of spices. Tart cherries and minerality lingers to a mouthwatering finale.
Pairings
Young, fresh and lively wine. Versatile, you could happily drink with or without food. Recommended with “pane e salame”.
